What matters is the construction and design. If these are essentially the same. Aluminum distributes heat well, is cheap and easy. Sides of the pan in aluminum, is also the excess heat can escape sideways. Anyim good conductor of heat increases the pan sides of the utensils is MUCH forgiveness, which means they can have several tasks to perform with children and not burn a phone call and the food, probably.
